O presente artigo apresenta como temática de reflexão a influência gastronômica da cozinha portuguesa na culinária do Japão, fato que remete ao intercâmbio cultural que envolveu os dois países ainda no século XVI. O objetivo da pesquisa consiste em evidenciar elementos da culinária portuguesa que foram culturalmente integrados à gastronomia japonesa e que influenciaram na adoção de técnicas e práticas culinárias que favorecem o aproveitamento integral dos alimentos Trata-se de uma temática relevante, visto que as cozinhas portuguesa e brasileira estão (...) fortemente entranhadas e após o fluxo migratório registrado no início do século XX também a culinária japonesa se fundiria no Brasil com elementos próprios, cujos benefícios já se pode visualizar. Para alcançar tal objetivo foi necessário realizar uma retrospectiva histórica que esclarece a influência cultural lusitana entre os japoneses após os primeiros contatos entre os dois povos. A culinária desenvolverá, a partir das técnicas herdadas dos portugueses, receitas que visam especialmente o aproveitamento integral dos alimentos evitando o desperdício que desencadeia prejuízos econômicos, sociais e ambientais. A metodologia utilizada na pesquisa tem caráter qualitativo e se caracteriza pela técnica da pesquisa bibliográfica. (shrink)

L’étude de la notion de nous est un cas très intéressant pour saisir la différence entre l’épistémologie de Socrate et celle de Platon. En effet, le mot nous, au coeur de l’épistémologie du Phédon et de la République malgré des différences évidentes, n’apparaît que rarement dans les dialogues de jeunesse et dans les témoignages de la première génération de socratiques. Il est donc nécessaire de comprendre pourquoi le nous n’est pas central dans la méthode socratique, et une des raisons de (...) la différence entre les méthodes socratique et platonicienne se trouve dans la distinction entre noein et phronein. Si pour Platon la connaissance est d’ordre intellectuel, elle est pour Socrate d'ordre pratique; si la méthode dialectique conduit à la vision des idées, la méthode de définition socratique conduit à l’aporie; si la vision est au coeur du nous, la phronesis tient du sentir et de l’écoute. Malgré ces différences, qui doivent être soulignées pour saisir la spécificité des deux méthodes, le rôle de l'eros dans la connaissance met au jour une forme de continuité entre les deux épistémologies et, ainsi, entre la phronesis et le nous. Il n'est pas fruit du hasard cette rencontre qui a précédé l'édition de ce livre. Les rapports entre philosophes français et catalans viennent de loin. Le XIXe était modèle des "voyages philosophiques". Est parmi les plus connus celui de Cousin en Allemagne. Moins connus, mais également fructifères étaient ceux des philosophes exilés qui partirent sous les régimes de persécutions pour trouver en France non seulement un lieu d'accueil, mais également l'opportunité de confrontation de leurs idées avec celles des philosophes français. (...) De la même manière, certains exilés de la commune avaient trouvé un lieu d'accueil dans la Barcelone révolutionnaire des années républicaines. Ces rencontres n'ont jamais totalement fini de se produire au long du XXe siècle, période au cours de laquelle l'exil avait constitué la manière d'échapper à une morte sûre dans l'Espagne de la guerre civile. Die Debatte genießt in liberalen Demokratien einen hohen Stellenwert. Das gilt nicht nur für den öffentlichen Raum, sondern auch für den Schulunterricht, der Heranwachsende auf die Teilnahme an dieser Praxis vorbereiten soll. Wie kontrovers soll und darf es im Klassenzimmer selbst aber zugehen? Wie steht es etwa mit antidemokratischen oder illiberalen Positionen? Sollen auch sie kontrovers diskutiert werden, oder sollen die Lernenden hier vielmehr von vornherein zur Übernahme der als legitim vorausgesetzten Position gebracht werden? Wenn ja, auf welche Weise? Diese (...) Fragen werden in der Bildungsphilosophie intensiv diskutiert. Der Beitrag befasst sich mit der sogenannten Kontroverse um Kontroversitätsgebote. Konkret widmet er sich Johannes Drerups Versuch, den Raum der Kontroverse im Klassenzimmer zu eröffnen und zugleich zu begrenzen. Zunächst wird betrachtet, wie er die Grenzen des Diskurses zieht und inwieweit er diese Grenzziehung überzeugend begründet. Dann werden die unterrichtspraktischen Konsequenzen, die er selbst daraus ableitet, und das Konzept eines „direktiven Unterrichtens“ im Kontext ethischer Debatten beleuchtet. Schließlich wird eine alternative Herangehensweise angedeutet: Statt zu versuchen, den Lernenden anhand kontroverser Themen top down einen fixen Wertekanon zu vermitteln, können Lehrpersonen solche Kontroversen auch zum Anlass nehmen, die Wertvorstellungen der Schüler:innen gemeinsam mit ihnen aufzudecken, zu explizieren und kritisch zu durchdenken. Eine solche Praxis dialogischer Wertebildung ist zwar für alle Beteiligten herausfordernder, scheint aber besser zur Idee der Demokratiebildung zu passen. (shrink)

L’image publique négative de la chimie, science et industrie, est une préoccupation importante pour nombre de chimistes. La proclamation de l’année 2011 comme « Année de la Chimie » par l’ONU en est une preuve. En réponse à cette préoccupation, deux modèles d’interaction avec le public peuvent être identifiés parmi les chimistes. Une première approche, structurée autour de l’idée d’« acceptabilité », vise à l’éducation du grand public et à la démonstration des bénéfices de la chimie dans la vie quotidienne. (...) Une deuxième approche, qui peut être appelée « dialogique », considère que les relations entre chimie et société vont au-delà d’une question d’image, et constituent surtout une question de fond. Comme pour d’autres sciences, il s’agit d’un changement nécessaire dans les pratiques des chercheurs et des industriels. Cet article analyse ces deux courants de pensée de façon comparative, selon trois aspects structurants : le concept de communication, l’image du public et les terrains de la communication.The negative public image of chemistry, science and industry, is a major concern for many chemists. Proclaiming the year 2011 as "Year of Chemistry" by the UN is proof. In response to this concern, two models of interaction with the public can be identified among chemists. One approach, structured around the idea of ​​"acceptability", aims to educate the general public and to demonstrate the benefits of chemistry in everyday life. A second approach, which can be called "dialogical", considers the relationship between chemistry and society beyond a question of image, and are mostly a matter of substance. Like other sciences, it is a necessary change in the practices of researchers and industrialists. A l'aube du troisième millénaire, l'âme est oubliée. Les poètes l'ont remplacée par son double, le corps ; les philosophes l'évitent, les psychanalystes tentent de le remplacer. Même les théologiens en boudent l'usage& Eclipse de l'âme. Une disparition si singulière appelle à la réflexion. Le mot très ancien se serait-il usé à force de trop signifier? Faudrait-il le ranger définitivement au grenier des idées désuètes? Ayant relégué l'âme au rayon des vieilleries, nous sommes aujourd'hui confrontés au fait que les notions (...) de corps, d'animal, de vie, de mort et de personne sont devenues impossibles à cerner, comme le savent les experts en bioéthique et les juristes, parfois désemparés devant les problèmes que posent la science, la médecine moderne et le développement des biotechnologies. L'auteur propose de revenir sur les théories et les " modèles " que les philosophes, les théologiens, les médecins et les hommes de science ont proposés, et parfois soumis à l'expérimentation pour penser l'âme, d'en retracer les origines parfois très anciennes, et d'en suivre les avatars dans l'histoire naturelle de l'Homme. Tout cela afin de retrouver le moyen de penser notre " place " parmi les autres êtres " animés ", les relations entre notre " âme vitale " et notre " âme pensante ", de penser les problèmes de la vie, la mort, et de la frontière entre les deux. La Kantkrise (« crise kantienne ») est un des aspects les plus étudiés de la pensée de Heinrich von Kleist, aussi bien par les historiens de la philosophie que par les germanistes. Au cours de presque un siècle de recherches sur ce thème 2, les interprètes ont identifié différemment l’œuvre de Kant – ou l’auteur, autre que Kant 3 – qui aurait déclenché cette crise 4. Pour la première fois, le présent article cherche à identifier le motif déterminant de la (...) crise dans un concept et permet de réviser l’idée même d’une « crise », entendue comme un événement ponctuel et isolé, pour lui restituer son sens d’événement intérieur, appartenant à un itinéraire intellectuel déjà engagé. Il s’agit d’un concept central pour la réflexion théologique et philosophique de la seconde moitié du XVIII e siècle, qui se trouve aussi en plusieurs textes littéraires : la « destination de l’homme » ( Bestimmung des Menschen ). The article discusses a sustainable educational approach for developing a moral value of peace by using a historical event, the bombing of Hiroshima. To make the case, the article uses the care theory of Nel Noddings to discuss the interpersonal aspects of peace education. The article asks how care theory handles tragedies like Hiroshima and it can contribute to a moral value of peace. The idea of caring is also examined, through Hiroshima, from a different angle, of the relationship between (...) nature and human beings. The political position of this article is to expand the idea of sustainability by creating values for peace using material related to the bombing. (shrink)

Challenging the public dichotomy characterizing fathers as “involved” or “absentee,” we investigate racial variation in college men’s perceptions of their paternal relationships and the gendered constructions these promote. The analysis draws on intensive interviews with Asian American, Black, and white sons from one university and survey data from 24 institutions. In both data sets, Asian Americans and Blacks describe greater paternal distance than do whites. This conceals variations in sons’ understanding of fathers. Asian Americans often criticize their fathers’ distance, disidentifying (...) with the near-exclusive focus on breadwinning they describe among fathers. In contrast, Blacks and whites normalize and identify with their dads. Blacks emphasize the “laid-back,” “cool” masculinity their dads impart, while whites often emphasize the independent masculinity based on mentorship and friendship their dads offer. Recasting sociological theories, we argue these differences emanate from divergent structural contexts, but more importantly, cultural conceptions of fatherhood, race, and gender as well as public discussions that valorize white models of fatherhood. In Constructing the World, Chalmers seeks to articulate and defend an important epistemic accessibility thesis, the Scrutability of Truth, which is crucial to Chalmers’ rationalist approach to meaning and modality. Chapters 3 and 4 of the book are devoted to persuading us that the move from weaker to stronger forms of Scrutability is intuitively plausible. In these comments, I want to question this move. The plausibility of strong forms of Scrutability hinges on controversial views about epistemic norms for answering ‘what (...) is x?’ questions that semantic externalists have good reason to reject. Chrysippus claims that some propositions perish. including some true conditionals whose consequent is impossible and antecedent is possible, to which he appeals against Diodorus?s Master Argument. On the standard interpretation. perished propositions lack truth values. and these conditionals are true at the same time as their antecedents arc possible and consequents impossible. But perished propositions are false, and Chrysippus?s conditionals are true when their antecedent and consequent arc possible, and false when their antecedent is possible and consequent impossible. Eukaryotic genome DNA is wrapped around core histones and forms a nucleosome structure. Together with associated proteins and RNAs, these nucleosomes are organized three‐dimensionally in the cell as chromatin. Emerging evidence demonstrates that chromatin consists of rather irregular and variable nucleosome arrangements without the regular fiber structure and that its dynamic behavior plays a critical role in regulating various genome functions. Single‐nucleosome imaging is a promising method to investigate chromatin behavior in living cells. It reveals local chromatin motion, which reflects (...) chromatin organization not observed in chemically fixed cells. The motion data is like a gold mine. Data analyses from many aspects bring us more and more information that contributes to better understanding of genome functions. In this review article, we describe imaging of single‐nucleosomes and their tracked behavior through oblique illumination microscopy. We also discuss applications of this technique, especially in elucidating nucleolar organization in living cells. (shrink)

This article is an attempt to develop the idea of peace education for adults through the assumption that, compared to peace education for children, educational approaches for adults are as yet undeveloped. This article also assumes that the progress of educational approaches for adults is necessary to the further development of peace education for children, as well as to the expansion of the theory. In navigating the argument around issues of peace education for adults, the article uses the example of (...) educational issues faced by Amerasians in Okinawa. The article argues that language education is a fundamental aspect of peace education for adults. It also demonstrates that the content of language education for adults is different from the content of language education for children. Furthermore, the article defends peace education for adults, through language education, as the very first step towards creating peaceful conditions for the education of Amerasians in Okinawa. This article is an attempt to develop a theory of peace education through an examination of the Fukushima Daiichi nuclear disaster. It examines why Japan did not avoid this terrible nuclear disaster. This is an educational issue, because one of the major impacts of Fukushima's catastrophe is that it indicates the failure of peace education. In order to reestablish a theory of peace education, the concept of domestic tranquility is discussed. This article questions whether the Japanese public order is consistent (...) with democratic principles. Jane Roland Martin's examination of the concept of domestic tranquility is shown relevant. Martin's language analysis helps to distinguish whether or not Japanese domestic tranquility under nuclear crisis is democratic. I propose that post-Fukushima disaster peace education should be reformed as consistent with two democratic principles: acceptance of the diversity of peace and continuous negotiation among these different narratives. The debate over patriotic education in Japan is marked by power shifts between the two different political groups that have different views of the role of patriotic education. By analyzing the power shift from a historical perspective, this essay makes a point that one of the problems of the debate over patriotic education in Japan is that the debate has never been discussed in terms of the conception of patriotism.

Through a discussion of the socially extended mind, this paper advances the “not possible without principle” as an alternative to the social parity principle. By charging the social parity principle with reductionism about the social dimension of socially extended processes, the paper offers a new argumentative strategy for the socially extended mind that stresses its existential significance. The “not possible without principle” shows that not only is something _more_ achieved through socially located processes of knowledge building, but also that, and (...) more importantly, what is achieved is something that _would not have been possible without_ social interaction_._ The social parity principle states that the result of an activity achieved via social interaction should be assumed functionally equivalent to a solitary investigation and is characterized by multiple realisability. Contrary to the social parity principle, the “not possible without principle” holds that the result would not have been achieved without the social interaction between (at least) two agents with specific existential needs. The socially extended mind never happens in a void. This means that the "not possible without" principle should be located in real-life, affectively charged, embodied experiences of skilful interactions between agents. This fundamental conceptual change via reference to the “existential necessity” that regulates socially extended processes is necessary in order to effectively lead the socially extended mind to a truly embedded and embodied account. This article argues that every performance of habit‐driven action requires attention. I begin by revisiting the conception of habit‐driven actions as reducible to automatically performed responses to stimuli. On this conception, habitual actions are a counterexample to Wayne Wu's action‐centered theory of attention. Using the biased competition model of attention, and building on findings from affective cognitive neuroscience, I challenge this position. I claim that the performance of a habitual action requires experiential history to be exerting an influence that is (...) best understood as implicit selection‐biasing. It follows from this that habit‐driven action is compatible with Wu's theory. (shrink)

This innovative new volume analyses the role of emotions in knowledge acquisition. It focuses on the field of philosophy of emotions at the exciting intersection between epistemology and philosophy of mind and cognitive science to bring us an in-depth analysis of the epistemological value of emotions in reasoning. With twelve chapters by leading and up-and-coming academics, this edited collection shows that emotions do count for our epistemic enterprise. Against scepticism about the possible positive role emotions play in knowledge, the authors (...) highlight the how and the why of this potential, lucidly exploring the key aspects of the functionality of emotions. This is explored in relation to: specific kinds of knowledge such as self-understanding, group-knowledge and wisdom; specific functions played by certain emotions in these cases, such as disorientation in enquiry and contempt in practical reason; the affective experience of the epistemic subjects and communities. The aim of the chapter is to discuss and evaluate the epistemic role of emotions in participatory sense-making, assuming 4Ecognition as background. I first ask why could emotions be beneficial for the collective processes of knowledge, especially discussing Battaly and arguing for a conceptualisation of emotions as socially extended motivations in virtue epistemology; then, I discuss participatory sense-making, both conceptually and phenomenologically, arguing for a fundamental role played by emotions in boosting epistemic cooperation and determining the quality of social bonds. (...) I advocate their specific function in epistemic cooperation. Epistemic cooperation is what brings about the generation of a shared meaning in participatory sense-making and thus, since emotions function as socially extended motivations, they boost the relationships among the agents, bonding them to the aims of their epistemic community. Moral disengagement is the process by which individuals mitigate the consequences of their own violations of moral standards. Although MD is understood to be co-determined by culture norms, no study has yet explored the extent to which MD applied to safety at work fosters safety violations, nor the role of organizational culture as a predictor of JS-MD. The current study seeks to address this gap in the literature by examining individual- and organizational-level factors that explain why employees fail to report (...) workplace accidents. We tested a latent variable structural model positing organizational culture typologies as predictors of JS-MD, which in turn is expected to mediate the relationship with accident underreporting. Using data from 1033 employees in 28 Italian organizations, findings suggest that bureaucratic safety culture was related to lower levels of JS-MD, whereas technocratic safety culture was related to greater JS-MD. In turn, JS-MD positively predicted employee accident underreporting and fully mediated the relationship between culture and underreporting. Theoretical and practical implications are discussed in light of the increasing focus on underreporting as well as the adverse individual and organizational consequences of failing to report workplace accidents. In qualitative interviews with a diverse group of experts, the vast majority believed unregulated researchers should seek out independent oversight. Reasons included the need for objectivity, protecting app users from research risks, and consistency in standards for the ethical conduct of research. Concerns included burdening minimal risk research and limitations in current systems of oversight. Literature and analysis supports the use of IRBs even when not required by regulations, and the need for evidence-based improvements in IRB processes.

We examined disgust and fear responses to spiders in spider-distressed and nondistressed individuals. Undergraduate participants (N = 134) completed questionnaires concerning responses to spiders and other potentially aversive stimuli, as well as measures of disgust sensitivity, anxious arousal, worry, and anhedonic depression. In addition, we obtained self-report and facial expressions of disgust and fear while participants were exposed to a live tarantula. Both spider distressed and nondistressed individuals reported disgust and exhibited disgust facial expressions in response to a tarantula. Disgust (...) in response to spiders was not found to be part of a general disgust response to all negative stimuli, nor was it due to a general negative emotional response to spiders. Emotional responses to spiders were differentially associated with scores on personality and psychological functioning measures. The results of this study provide evidence that spiders have a specific disgust-evoking status in both distressed and nondistressed populations. (shrink)

Do not chew with your mouth open! Take your hat off when you enter a church! Do not skip the queue! Pay your taxes! Do not cross on a red light! These are familiar imperatives, and their immediate source are ‘socially constructed norms’: norms that exist as a matter of social fact. These range from informal etiquette and politeness norms to the complex norms making up our legal systems. While we often feel bound by these norms, we are also aware (...) that they can be pernicious: the product of injustice and vehicles for its perpetuation. The question thus arises: when and why, if ever, does the fact that a socially constructed norm requires us to perform a certain action place us under a genuine moral obligation to comply? In Morality and Socially Constructed Norms, I answer that such an obligation, when it exists, is grounded in a broader, familiar duty, namely the duty to respect people’s permissible and authentic exercises of agency. This is what I call the ‘Agency-Respect View.’ The first part of the book outlines and defends the view, the second part considers relevant applications. (shrink)
